Lavender Birthday Cookies

I recently celebrated my birthday and received a gift of dried lavender from one of my lovely ladies. I’ve wanted to get my hands on this beautifully delicious flower for a while now and spent hours searching for my first lavender recipe. I decided on a basic sugar cookie recipe that called for lemon juice – yum. Several things were learned during this process: 1) baking with lavender makes your apartment smell like heaven (like, an expansive field of wildflowers heaven with weeping willows and puppies), 2) you don’t need a rolling pin to make sugar cookies, and 3) I LOVE LAVENDER.

Here’s what I used:

  • 1 tablespoon lavender
  • 1-3/4 cups sugar (divided)
  • 1 lb. butter, softened
  • 1/4 cup lemon juice
  • 1 egg
  • 6 cups flour

Here’s what I did:

  1. Blend lavender and ¼ cup of the sugar in a food processor (I used a regular blender).
  2. Beat butter with Lucy (or whatever you call your mixer) until smooth.
  3. Mix in the remaining 1 ½ cups of sugar gradually.
  4. Mix in the lemon juice and egg until fully incorporated.
  5. Mix in the flour and the lavender/sugar mixture.
  6. Form small, one inch balls with the dough (I used my hands…fun) and place on greased baking sheet.
  7. Sprinkle each cookie lightly with sugar and gently flatten with bottom of a small glass.
  8. Bake at 350 degrees about 9 minutes or until lightly golden.
  9. Cool on wire rack and eat it!
