Hazelnut Blondies

Nutella, check. Hazelnuts, check. These blondies are moist and chewy and oh so yummy. Next time, I’ll throw in a handful or two of chocolate chips for good measure.

Hazelnut Blondies
makes about 2 doz/adapted from this recipe

Here’s what I used:

  • 1/2 stick butter
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 3/4 cups light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/3 cup chopped hazelnuts
  • 1 heaping teaspoon Nutella

Here’s what I did:

  1. Mix together flour, baking powder and salt – set aside.
  2. Melt butter and beat in sugar .
  3. Beat in eggs, one at a time, and vanilla.
  4. Gradually mix in dry ingredients until combined.
  5. Mix in hazelnuts and Nutella.
  6. Bake at 350 degrees in a prepared pan (I used an 8×11) until a toothpick comes out clean.
  7. Cool, cut and eat it!

Cute Blond(ies)

So I’m eating my last little blondie as I write…yum. This was a special order for the recent Mexicana Monday extravaganza – so much fun! The recipe I used is amazingly easy – and you can experiment with different additions as the mood strikes. I highly recommend using almond extract and white chocolate chips…holy hell yeah.

Blondies
makes about 20 blondie bites / adapted from this recipe

Here’s what I used:

  • 8 tablespoons butter (melted)
  • 1 cup brown sugar (I used dark…it’s my fave)
  • 1 egg
  • 1/2 teaspoon almond extract
  • pinch salt
  • 1 cup flour
  • 1/2 cup white chocolate chips
  • 1/2 cup pecans
  • 1/2 cup shredded coconut

Here’s what I did:

  1. Mix the melted butter and brown sugar until smooth.
  2. Blend in the egg and almond extract.
  3. Stir in the salt and flour.
  4. By hand, mix in the chocolate chips, nuts and coconut.
  5. Pour batter into a prepared 8×8 pan.
  6. Bake at 350 degrees for 25 minutes (or until firm in the middle).
  7. Cool on wire rack and eat it!
